Lemonade Scones with Strawberry Cream
As the days slowly begin to brighten and the thought of spring starts to feel just around the corner, this month’s recipe brings a little freshness to the table. These simple lemonade scones are light, soft and easy to make, with a cheerful strawberry cream that adds a lovely hint of spring.
Ingredients
- 3 cups self-raising flour
- 1 cup cream
- 1 cup lemonade
- Pinch of salt
- Extra flour for dusting
For the strawberry cream
- 1 cup whipped cream
- ½ cup finely chopped strawberries
- 1 teaspoon icing sugar, optional
Method
- Preheat oven to 200°C and line a baking tray with baking paper.
- Place flour and salt in a bowl. Add cream and lemonade, then gently mix until just combined.
- Turn onto a lightly floured surface and gently pat out the dough.
- Cut into rounds and place close together on the tray.
- Bake for 12–15 minutes, or until golden.
- Fold chopped strawberries through whipped cream.
- Serve warm scones with strawberry cream and, if you like, a little jam.
